Chef Justin Spott Takes the Helm at Tarpon Bay Seafood Restaurant, Hyatt Regency Coconut Point Resort and Spa
BONITA SPRINGS, FL (February 28, 2020) Hyatt Regency Coconut Point Resort and Spa is pleased to announce the appointment of Chef Justin Spott as Chef De Cuisine at Tarpon Bay Restaurant. After nine years of experience in numerous culinary roles at the award-winning resort, Chef Spott is already at work creating new entrees while keeping old favorites at this popular, fine seafood restaurant, located at the picturesque Hyatt Regency Coconut Point Resort and Spa in Bonita Springs, FL.
“My plan is to bring a tropical Mediterranean vibe to Tarpon Bay’s seafood menu. I enjoy cooking in a French style with beautiful presentations and fresh, locally sourced ingredients that enhance the flavors of my recipes,” said Chef Spott. “I’ve already incorporated a new offering consisting of a three-course meal paired with wines. Our regulars really enjoy it so far,” he said.

Justin began his Hyatt culinary career as a Florida transplant from Virginia where he was a Banquet Line Cook. Now, as a member of the American Culinary Federation, Justin has spent years gaining further experience at Hyatt Regency Coconut Point Resort and Spa, serving as a Culinary Supervisor at Tarpon Bay, Chef at Tanglewood restaurant, and a contributor to the resort’s banquets preparations. He is a proven leader that has stepped up to the occasion when needed. His leadership skills can be attributed to his completion of Hyatt’s Future Leaders program where skilled individuals can be guided towards reaching their full potential.
